Soba is a buckwheat noodle that originates in Japan. It is popular because of its versatility. It can be eaten hot, cold, or warm, with hot broths or cold sauces. Soba consumption is thought to have originated in the Edo Period (1603-1868) when every neighborhood in Edo (modern day Tokyo) had one or two soba establishments that would also sell sake.
