Before Taylor & Ng created the Pre-seasoned Wok, a carbon steel wok needed to be seasoned before it could be used for the first time. Seasoning is a tedious process that requires deep cleaning and repeated heating and oiling of the wok over very high heat. The carbon steel reacts naturally to this seasoning process and produces a cooking surface that is virtually non-stick. The more the pan is used, the thicker and more durable this seasoned surface becomes.
Over the years, properly seasoned carbon steel has proven to be one of the best materials for all-around cooking ease – it is a superior material for fast efficient heating and even heat distribution. Properly seasoned carbon steel provides a long lasting easy-release surface that can withstand the high temperatures necessary for stir-fry cooking, yet does not peel or crack. Most important, it is natural.
